ingredient for 4 persons
500g of red dry beans
2 onions
2 tomatoes
120 g of fresh breast
1 farinheira (portuguese specialtity to buy in a portugese shop)
1 chorizo
garlic, salt, pepper, parsley, laurel
2 cloves
2 tablespoon of olive oil
preparation :
leave the beans in water a whole night
cook them in salted water with a spoon of olive oil and a clove sticked onion
make little holes in the farinheira so it doesn't explode and put it unto the water when the beans are cooked
slice an onion, the garlic and the tomato then brown this with a spoon of olive oil.
add the breast and the chorizo cut in pieces, a leaf of laurel and the parsley.
Sprinkle with a little water of cooking and let this shimmer.
add the cooked beans
add salt and pepper, let reduice once the cassoulet cooked. serve
